tex-mex eggs


  • 1 large egg
  • 2 large egg whites
  • 1/4 cup canned black beans, drained + rinsed
  • 1/4 medium avocado
  • fresh cilantro
  • Green Tabasco (great on this!)


Spray a small non-stick skillet with cooking spray and heat over medium heat.

Mix eggs together in a small bowl and add black beans.

Scramble eggs in pan, stirring until fluffy and cooked through.

Remove from heat and add to a plate with avocado, top with freshly torn cilantro.

Option: add a dollop of salsa or pico de gallo.

Hands-on time: 7 minutes
