grilled chicken lettuce cups

Ingredients:

  • 16 medium to large Bibb lettuce leaves, rinsed & carefully patted dry (buy 2 packages of hydroponic Bibb lettuce in the plastic box container sold at most grocers)
  • 16 oz pre-grilled chicken breast strips (I prefer organic Brat Hans or Applegate Naturals brands available at Whole Foods; pescetarians – substitute 16 oz shrimp cocktail, tails removed = less overall calories)
  • 2 large avocados, halved & sliced
  • 2 cups fresh mango pineapple pico de gallo or regular pico de gallo (I buy this in the produce section of Whole Foods, most grocers now sell this freshly prepared)
  • fresh cilantro
  • green pepper Tabasco (optional)

Directions:

Put 4 lettuce leaves on each plate.  Top each plate of lettuce with 4 oz grilled chicken breast, 1/2 sliced avocado, 1/2 cup pico de gallo & freshly torn cilantro.

Serves 4
